Let’s face it… we’re all crazy busy during the week.  So here’s a simple, easy, but delicious side dish that you can make in minutes.  Whether working late, exercising, teaching Zumba, or have late meetings, you won’t have to worry about having to do too much extra work!

In Italian: Carciofi (artichokes)

All you’ll need is:

-A bag of Trader Joe’s frozen artichoke hearts

-Extra virgin olive oil

-Salt & Pepper (to taste)

-Fresh grated Parmesan


Preheat oven to 375 degrees. To quickly defrost, put the bag in the microwave on defrost.  Once defrosted a bit, open the bag, spread out onto a baking dish, and drizzle with a little extra virgin olive oil.  Next, sprinkle on a little salt & pepper and pop into the oven.  Cook until golden brown.  As you’ll see, we like them to be a little crispy.  To do that, flip the oven onto broil and cook on broil for another 3-5 minutes until browned up.


Before serving, grate a little fresh Parmesan over the top and you’ve got yourself a great side to any meal!
