Breakfast is hands down my favorite meal of the day. After a good morning workout, I always am ready to have something really good to eat!

Here’s what you’ll need: (makes 2 sandwiches)
-2 very thin slices of white cheddar cheese
-4 slices of whole grain bread
-1 small handful of Mesclun lettuce
-1/8 cup chopped onion
-Dash of crushed red pepper
Mash up an avocado in a bowl with a 1/8 cup chopped onion. Season with a little salt & pepper and crushed red pepper to taste. I like to mash it so it’s almost the consistency of guacamole, but still a bit chunky.
Heat up a large non-stick frying pan and spray with Pam. While this is heating up, put the 4 slices of break in the toaster. When the pan is hot, crack the 4 eggs (one at a time) into the pan and fry for 2 minutes. Carefully flip each egg and press down so that the yolk runs a bit. Cook for another 2-3 minutes. The reason for this is that you want your egg to be fully cooked so it doesn’t run while it’s inside your sandwich – it will be too messy (BELIEVE ME!!). Season each egg with a dash of salt & pepper.
When your toast is just about done, cover 1 slice per sandwich with a thin piece of white cheddar cheese. It should melt during the last minute of cooking. Once your toast is done and the cheese has melted, take it out and plate them. Pile 2 eggs on top of each piece of toast with the melted cheese.
On the other piece of toast, spread out the avocado mixture as thick or thin as you’d like. Jeff LOVES avocado, so I was generous with the avocado on his sandwich. Lastly, put a few greens on top of the avocado and voila!
