Do you have leftovers that you don’t know what to do with? GET CREATIVE!

I had a bit of leftover bruschetta topping that I didn’t know exactly what I wanted to do with.  I could mix it in with a salad, yes, but I decided to experiment.  Consider it a success!

Leftover Breakfast Sandwich (makes 2 sandwiches)

Ingredients:

-4 eggs

-2 whole wheat english muffins

-non-stick pan spray (Pam)

-4 pieces of thinly sliced white cheddar cheese

-leftover bruschetta topping (see recipe)

Directions: 

In a large, non-stick frying pan, lightly coat the pan with non-stick spray and heat on medium heat.  When the pan is hot, crack 2 eggs at a time into the skillet.

Cook for about 1 minute or 2, then flip.  Gently press down so the yolk breaks.  You’ll see the yolk drip out, but don’t worry! Let the yolk get a little cooked.  This will help make your sandwich less messy!

While you’re doing this, toast the 2 english muffins in your toaster oven.  When they get lightly toasted, place one thin piece of cheese on top of each side.  Continue to toast until all the cheese has melted.  Warm the leftover bruschetta in the microwave.

Ok, now it’s time for the sandwich assembly.  You’ll want to stack the following on the bottom piece of the muffin: the 2 cooked eggs, then bruschetta topping, then top of english muffin.
