It’s easy to get bored with side dishes because we get tired of eating the same old things, day after day.  Keep things fun and interesting… MIX IT UP!  So here’s a fun new side dish that’s healthy, easy, AND yummy!

Ingredients: (serves 2)

-1 large zucchini (use 2 if they are small)

-Extra-virgin olive oil (DUH!!)

-Salt & Pepper to taste

-Crushed red pepper to taste

-Grated fresh Parmesan cheese


THINLY slice the zucchini sideways to make small rings.  Cutting the zucchini thin is KEY.  Lay the pieces flat on a pan so that they are not overlapping too much, if possible.  Sprinkle with EVOO, salt, pepper, and crushed red pepper.

Broil until slightly browned and fully cooked, about 4-6 minutes.  Take out of the oven and let cool slightly.  Sprinkle evenly with fresh grated Parmesan cheese.
