As we’ve expressed, pork is a great way to change it up when it comes to dinner time. Tired of chicken? No worries! This pork recipe is easy to make any night of the week and delicious!
4 boneless pork cutlets
1/2 cup balsamic vinegar
1/4 cup extra virgin olive oil
2 cloves garlic, minced
1/2 cup sliced hot cherry peppers
fresh ground pepper
Total cook time: 30 minutes
Start off by pounding the cutlets as thin as you can. Season each side of them with salt and pepper. In a large saute pan over medium-high heat, use enough olive oil to coat the pan. When hot place your cutlets in the pan and cook until each side is golden brown. Once done, remove from the pan and set aside. In the same pan, turn the heat down to medium and add the vinegar, garlic, peppers and remainder of the olive oil. Cook down a bit and then add back the pork along with the juices from the pan you set them aside in. Coat both sides of the pork with the sauce and let the pork soak up the juice for a minute or two. That’s it! Serve and enjoy this any night of the week or weekend.
WIne suggestions: Pinot Noir or Malbec are a couple reds that we like with this dish. Sauvignon Blanc or Pinot Grigio are two whites that would go well if you prefer white.
