With all this beautiful, hot summer weather we’ve been having here in CT, I wanted to make a light meal for us to enjoy.  After being inspired by a Pinterest recipe, I decided to make my very own rendition of the salad using a grapefruit, an avocado, and some pan-seared chicken.


-1 grapefruit, peeled

-1 avocado, peeled and sliced

-1 package of thinly sliced chicken

-Olive oil

-Salt & pepper

-Crushed red pepper

-Salad (I prefer a Spring Mix)


Using a very sharp knife, carefully cut the skin off the grapefruit.

Peel & cut up 3/4 of the grapefruit into small chunks.  In a small mixing bowl, mix together the remaining juice of the grapefruit and whisk in some olive oil.  Add salt & pepper to taste.

In a bigger bowl, dress the salad.

Now it’s time to cook the chicken.  Wash and dry the chicken thoroughly.  In a large pan, let a little olive oil heat up and place the chicken in.  Sprinkle with salt, pepper, and crushed red.  Let cook for about 3-4 minutes per side.  These pieces were very small and thin, so it cooks quickly.  Adjust the time according to how big & thick your chicken is.  Do not overcook.

When the chicken is done, remove from the pan onto a plate.  Using a fork and knife, dice up the chicken to your liking.

To serve, place a generous portion of dressed salad at the bottom, creating a bed.  Next, sprinkle some diced grapefruit and avocado slices.  Finally, top with the chicken.
