I LOVE breakfast!  Every once in a while, you’ve got to indulge 😉  Here’s our version of “guilt free” pancakes.

Ingredients:

-Whole wheat pancake mix

-1 egg

-Skim or 1% milk

-Vegetable or canola oil

-1 1/2 scoops of vanilla protein powder

-10 almonds, chopped finely

-Light maple syrup

-1 banana, sliced

-1 cup blueberries

Directions:

Follow the box directions on the whole wheat pancake mix to prep the batter (making the smallest serving).  Add in 1 and 1/2 scoops of vanilla protein powder, then add in 10 chopped almonds into the mix.

Follow box directions to make the pancakes.  For best results, Jeff suggests dropping a little veggie oil in a pan, then spreading it around the pan with paper towel to get a light coating.

Top the pancakes with fresh fruit (bananas & blueberries), then a little maple syrup.  YUM!

Tip: Heat up the maple syrup in the microwave for about 20 seconds.
