Every once in a while, spoiling yourselves on a yummy breakfast is OKAY!  We get tired of egg whites and light english muffins… so on the weekend mornings we try to change it up sometimes.

We never make french toast… and I’m not sure why.  It’s really easy and very delicious.  Especially with some fresh fruit and good maple syrup.  Oh … and powdered sugar.

Ingredients: (serves 2)

-4 slices of 6 grain bread (we like the Stew Leonard’s bakery bread)

-2 eggs

-Dash of skim or 1% milk

-Tsp vanilla extract

-Fresh cut fruit (bananas & blueberries)


In a large pan, whisk the 2 eggs with a dash of skim or 1% milk and 1 tsp vanilla extract.  Dip in one piece of bread at a time into the mixture.  Make sure both sides are evenly coated.

In a large frying pan (or griddler), cook each side for about 1-2 minutes until golden brown.

Flip gently.

Once both sides are golden brown, place onto a plate and sprinkle with powdered sugar. YUM 🙂

Cut up some fresh fruit.  Bananas & blueberries are great!  Strawberries, raspberries, and blackberries would also be a great addition.  We spindled a little powdered sugar on the fruit too.

Now build your own perfect piece.  I like mine topped with fresh fruit and a little warm maple syrup.

Note: Place your maple syrup in a small container and microwave it for 10 – 20 seconds until warm.  Believe us… it makes all the difference!
