But we’ve been continuing to cook delicious recipes and we have lots of great things to share with you! And just in time for the holidays. Cominciamo! (Let’s begin!)
Pesto is delicious! And so easy to make. It’s our favorite easy “sauce” to make, especially with fresh basil. This pesto grilled shrimp recipe is from our good friend Vivanna, who is also a fantastic cook! Hope you enjoy it as much as we did.
Ingredients: (Serves 4)
-3 large handfuls of basil leaves
-2/3 of a cup extra virgin olive oil
-1/4 cup pine nuts
-2 cloves of garlic
Clean the shrimp and pat until dry, leaving only the tales on. Skewer the raw shrimp so there’s about 5 on each stick.
To make the pesto, combine the basil, garlic, and pine nuts in a food processor or blender and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper. Add all the remaining oil and pulse until smooth.
In a container or large dish, lay the skewered shrimp down and pour the pesto mixture over them. Let marinate for about 30 minutes to an hour in a cold area.
Grill the shrimp for about a minute or so on each side until they turn pink. If you have extra pesto, you can drizzle the mixture over the skewers as they’re grilling.
