I have to admit… I’m a creature of habit in every sense of the word. I just really like my routine. Not only do I like to eat the same things on a daily basis, but I do not like break my weekly schedule. But every once in a while, you’ve got to shake it up!
So last week, I was tired of my normal breakfast smoothie and decided to try something new. I was really inspired by the overnight oats recipes I saw on Pinterest, so I made my own. It turned out fantastic, so here it is!
- 1/4 cup uncooked old fashioned rolled oats
- 1/3 cup Light Almond Milk (or whichever kind of milk you prefer)
- 1/4 cup plain 0% Greek yogurt
- 1-1/2 teaspoons chia seeds
- 1 teaspoon cinnamon
- 1/4 cup pumpkin puree
- 1 teaspoon agave syrup
- 1/2 teaspoon of vanilla extract
- 2 tablespoons chopped nuts (optional)
In either a half pint (1 cup) jar or small container, add the oats, milk, yogurt, chia seeds, cinnamon, and agave. Stir thoroughly until well combined.
Add the pumpkin and stir again until mixed throughout. Cover the jar or container and refrigerate overnight (or up to 2 days). When ready to eat, sprinkle the chopped nuts on top and serve chilled.
