Here’s a great veggie recipe that’s super simple.  It’s very healthy and you don’t need many ingredients to make it. Sometimes there’s nothing better than throwing some veggies on the grill.  So go fire it up!

Nutritionally, eggplant is low in fat, protein, and carbohydrates.  It also contains relatively low amounts of most important vitamins and minerals.  Hey… it makes for a great side dish!

Ingredients:

  • 1 medium to large sized eggplant
  • Olive oil
  • Salt & pepper
  • Crushed red pepper (of course)

Directions: 

Wash the eggplant and dry.  Chop off the top and bottom and discard.  Then cut the eggplant in long, thin slices.  You’ll want to season each slice top & bottom.

Drizzle each slice with olive oil and season with salt, pepper, and crushed red pepper to taste.  It’s better to drizzle with more olive oil then less because otherwise it is too dry.  I can’t give an exact measurement, so refer to the pictures below.

Flip over and repeat so top and bottom are lightly seasoned.

Grill for about 2-3 minutes a side on high heat so that you get light grill lines & softens in texture.  Be careful not to burn, especially on the thinner pieces.
