I guess I’m a weirdo because I’m not a huge pizza person. Never have, never will. But once in a while, I can definitely go for it! One week night, I was really craving it. Since there’s no way we’d have time to make pizzas the way we usually like to, I decided to get creative.
Whelp, it doesn’t get much easier than this. And they came out AWESOME!
- 4 whole wheat pita pockets
- Fresh mozzarella, sliced thinly
- Extra virgin olive oil
- Salt & pepper
- Crushed red pepper
- Rao’s marinara sauce (jar)
- Fresh basil
Preheat the oven to 350 degrees F.
Lay the pitas flat down on a baking sheet (you may need to separate into 2 trays to make 4 pizzas). Drizzle with about 1-2 tablespoon of extra virgin olive oil. Bake for about 2-3 minutes until slightly crispy & golden.
Take out and top with as much marinara sauce as desired. I like a lot of sauce, but because they are so thin, try not to overdo it. Top with about 3 or 4 thin slices of fresh mozzarella and a little fresh basil. Sprinkle with a little salt, pepper, and crushed red pepper to taste. Bake in the oven for another 5 minutes until the mozzarella is fully melted, but not overdone.
