Every morning I make Jeff an egg, some egg whites, and a whole wheat english muffin. Pretty nice, right? But it gets boring. I’m even bored of cooking it! So I got creative and made Jeff something special without making it complicated. This recipe is PERFECT for mornings that you don’t have a lot of time – which is most days for a lot of people!
Bacon can take time to make just right. We both like our bacon extra crispy, so that’s not something I can tackle during the week. But this Canadian Bacon is super easy. I just put 2 pieces flat in a pan and let them brown up.
- 2 pieces of Canadian Bacon (I recommend Jones Dairy Farm brand because it’s the leanest)
- 1 egg
- 2 egg whites
- 1 whole wheat english muffin
- 2 thin slices of sharp cheddar cheese
- Hot sauce
Brown up 2 slices of Canadian Bacon in a non-stick pan with no oil or butter – just straight in the pan. While that’s cooking, start toasting the english muffin in the toaster oven. Half way through the toast, take the top slice out and place the 2 slices of cheddar cheese on top. Place back in the oven.
Once the Canadian Bacon has cooked, put it to the side on top of a paper towel and set aside.
In the same non-stick pan, lightly line the pan with some non-stick spray. Crack 1 whole egg into the pan and add 2 egg whites. Once that side has cooked, flip the eggs without folding so they cook evenly. Once the eggs are fully cooked, fold in half and place on top of the bottom english muffin.
Then layer on the Canadian Bacon and drizzle with a drop or 2 of hot sauce. Finally, top with the top half of the english muffin. At this point, the cheddar cheese will be nice and melty!
