It’s time to start getting serious about shedding a few pounds! Although it really doesn’t feel like it, spring is around the corner. And you know what that means??? No, not bathing suit season. WEDDING SEASON! We just passed our 4 month countdown until or wedding.

Meltdown mode commence!
As you can tell from our recipe index, we love butternut squash. So I decided to really change it up and get fancy with some turkey bacon!
- 1 half of butternut squash (I purchased the pre-prepped one from Stop & Shop)
- Olive oil
- Salt & pepper
- Crushed red pepper
- 4 slices of turkey bacon (I recommend Jones Diary Farm brand because it’s All Natural and Cherrywood Smoked)
Preheat the oven to 400 degrees F.
Chop the butternut squash into thin slices – about a quarter inch thick. Lay the slices flat out on a baking sheet and drizzle with olive oil, salt, pepper, and crushed red pepper to taste. Let cook in the oven for about 30 minutes until tender.
About 20 minutes into cooking, take the pan out of the oven and use tongs to flip each piece over to get an even roast.
While the butternut squash is cooking, brown up 4 pieces of turkey bacon in a non-stick pan (you don’t need any oil or spay), for about 5 minutes a side until it’s nice and crispy. Remove and place on a paper towel.
Once the bacon has cooled, chop the bacon into pieces.
Enjoy is healthy, delicious winter vegetable!
