Since we’re on the health kick, I’m on a mission to purchase all lean meats for dinner. But in all fairness, there’s only so much chicken you can cook before you feel like you’re going to turn into a chicken. I happened to pass by some turkey breasts in the grocery store and figured I’d give it a try. To be honest, I actually hadn’t cooked turkey breasts before.
How hard could it be? Luckily, not hard at all. This recipe is incredibly easy and best of all… super delicious.
- 1 pound non-fat turkey breasts
- 2 green onions (scallions)
- Juice of half of a lemon
- 2 tablespoons toasted sesame seeds
- Olive oil
- Crushed red pepper
Chop the green onions (scallions) and cut open a lemon. Remove the seeds of half of the lemon and save the other half.
Saute the chopped green onions in a non-stick pan with a drizzle of olive oil for about 2-3 minutes.
Place the turkey breasts flat in the pan. Season with salt, pepper, and crushed red pepper to taste. Let cook for 3-4 minutes. Do not touch them until the 3-4 minutes are up.
Next, flip each piece over and season with salt, pepper, and crushed red pepper. Squeeze in the juice of half a lemon. Let cook for another 3-4 minutes or so. The thinner the breasts, the quicker they’ll cook. So be careful not to over-cook.
That’s it. Simple as that. See, healthy eating can still be yummy!
