I loveeeeee sweet potatoes.  I actually think I could eat them every day without getting tired of them.

With the wedding coming, we’ve been making an effort to eat healthy, so sweet potatoes are always in our refrigerator.  And since we eat them so frequently, we’re always trying new ways to make them.  Here’s another great recipe.  Again, simple & easy.

Ingredients:

  • 2 medium-sized sweet potatoes
  • Olive oil
  • Salt
  • Pepper
  • Cinnamon

Directions:

Heat the oven to 375 degrees F.

Wash and dry the sweet potatoes.  Pork some holes in them with a fork and microwave for about 4 minutes.  Take them out and let cool.  Slice them into thin circles so they look like potato chips.  Keep the skin on- that’s the best part!

Lay the slices flat-out on a pan and drizzle evenly with olive oil – about 1/4 cup.  Then sprinkle with salt & pepper and cinnamon to taste.  Put in the oven for about 15-20 minutes until cooked, then switch the oven on broil for about 5 minutes or so until they get nice and crispy!  But be careful not to let them burn.
