Avocados are on sale!!  So what does that mean?  Go buy some… duh!  They’re yummy, healthy, and perfect for any time of day.  We’re crazy about avocados these days.


  • 1 avocado
  • 1 whole wheat english muffins
  • 1 egg & 2 egg whites, beaten
  • 1 small tomato, chopped
  • 1/2 onion, chopped
  • Olive oil
  • Salt & pepper
  • Crushed red pepper


Begin by toasting the english muffin in the toaster oven.

In a medium sauté pan, heat up a drop of olive oil and add in the chopped onion and tomato.  Season with salt and pepper and let cook on medium-high heat for about 3-5 minutes, stirring occasionally.

Once those are cooked enough, add in the beat eggs & whites.  Let cook on medium heat for about  minutes.  Make sure the onion and tomato are evenly distributed throughout the pan.

Now it’s time for the flip.  You’re going to want to do it quickly and forcefully, but not TOO forceful!  It takes practice… there’s just no other way around it.

Once flipped, let cook for another 2-3 minutes until golden in color.  Remove from heat and set aside.

Remove the avocado from its shell and throw away the pit.  In a bowl, mash-up the avocado with a drop of olive oil, salt, pepper, and crushed red until thoroughly mashed and consistent in texture.  Spread the guacamole lightly on each side of the english muffin.

Optional: Slide some fresh avocado on top the eggs.
