There’s nothing like the flavors of fall!  Fall squashes, Thanksgiving meals, bold red wine…

As everyone knows, brussels sprouts have been a very popular vegetable over the past few years.  Between last year and this year, we’ve been seeing a lot of kale too.  During our last Stew Leonard’s shopping adventure, we discovered a Kale & Shaved Brussels Sprout Medley that we couldn’t pass up trying out!  This is the perfect fall recipe and will complement any meal.  Plus, it’s healthy and super simple to prepare!

We recently learned all the ways you can use Hood Sour Cream in every day meals.  This is an ingredient that Jeff and I would normally pick up off the shelf, however, we found that it’s a really great way to make sauces just a little creamier without adding a ton of calories.

  • 1 container of shaved brussels sprouts & kale medley with red cabbage (the fresh vegetables will be just fine – just shave the brussels sprouts finely and chop the kale and cabbage up into bite-sized pieces)
  • 1/4 cup extra virgin olive oil
  • 2 dollops of Hood Sour Cream (I used the low-fat kind, but the fat-free also is great!)
  • Juice of 1/2 fresh lemon
  • 2 tablespoons apple cider vinegar
  • 1/4 cup slivered almonds
  • 1/2 cup sliced grapes (red or green)
  • 3 tablespoons of dried cherries
  • Salt & pepper to taste


Double check your vegetables have already been washed.  If they haven’t, wash and dry thoroughly.  If you are using fresh kale and brussels sprouts, you’ll need to shave the brussels sprouts on a mandolin slicer (be careful!) and chop your kale and red cabbage.

In a small mixing bowl, whisk together the oil, lemon juice, apple cider vinegar, and sour cream.  In a larger bowl, mix together the shaved brussels sprouts & kale medley with the oil/sour cream mixture.  Next, sprinkle the slivered almonds, dried cherries, and grapes over the salad.  Season with salt & pepper to taste.  Mix thoroughly.

That’s it!  So easy and super yummy!  Enjoy as a side with dinner or for as light lunch.
