Lately these days, it’s dark out when we get home and we try to make something easy for dinner.  Most people I know can relate to this situation.  I have now come up with a great fast recipe that is healthy and satisfying!  Kale has quickly become the green du jour, so here’s a way to please even the most ardent of anti-kale people.

Ingredients: (For 4 portions)

  • 1 lb of ground turkey
  • 1 large bunch of kale, washed and chopped
  • 2 large cloves of garlic
  • 1 cup of white wine
  • 1/2 cup of chicken broth
  • 1 can or 16 oz of cannellini beans
  • 1 TBSP of smoky chipotle
  • Approx. 3 TBSP of olive oil
  • Salt and fresh ground
  • Dash of crushed red pepper, to taste


Begin by placing a large sauté pan over medium-high heat.  Drizzle 2 TBSP of olive into the pan with crushed garlic cloves.  Brown garlic for a minute or two.  Put the kale into the pan and then add the white wine and the remainder of the olive oil.  Cover the pan and cook down until the kale is wilted.  A minute or so later once that is done, add the ground turkey, cannellini beans, chipotle and crushed red pepper, if desired.  Add the chicken broth and mix everything up.

Continue to cook until the turkey is browned and cooked through.  Serve in a bowl to keep nice and warm.
