Hey… we put that s*** on EVERYTHING!

During one of the last snowstorms, I was in the mood for a hearty, but also easy meal so I decided to make a slow-cooker recipe.  I used a package of skinless chicken thighs and added some onions, butter and hot sauce.  The beauty of this meal is that you can put everything in one pot and leave it alone to cook.  You can use the resulting deliciousness in a sandwich, wrap, taco, or even on a pizza!  Here’s what you’ll need:

  • 1 package of skinless chicken thighs (1 lb.)
  • 4 tbsp of butter
  • 1 cup of cayenne pepper sauce (I use the Stop and Shop brand which has less sodium than Frank’s Red Hot)
  • 1 large white onion, sliced
  • salt and pepper, to taste
  • 1 baguette for sandwiches, slightly toasted

First, prep your ingredients and turn your slow cooker to high.  Place all ingredients into the pot and set for 4 hours on high.  If you are leaving this during the work day, 6 hours on low should do the trick.  Remember to watch for bones if you use chicken thighs.  I like using thighs because they have more flavor than all white meat breasts.  It really comes down to preference.  Once the chicken is down and has a “pulled” looked to it, slice your baguette and fill your sandwiches.

That’s it!  Easy enough for anyone short on time.  Enjoy!
