Buffalo Chicken Sandwiches

Hey… we put that s*** on EVERYTHING! During one of the last snowstorms, I was in the mood for a hearty, but also easy meal so I decided to make a slow-cooker recipe.  I used a package of skinless chicken thighs and added some onions, butter and hot sauce.  The beauty of this meal is that you can put everything in one pot and leave it alone to cook.  You can use the resulting deliciousness in a sandwich, wrap, taco, or even on a pizza!  Here’s what you’ll need: Ingredients: 1 package of skinless chicken thighs (1 lb.) 4 tbsp of butter 1 cup of

Sautéed Kale & Turkey Bowl

Lately these days, it’s dark out when we get home and we try to make something easy for dinner.  Most people I know can relate to this situation.  I have now come up with a great fast recipe that is healthy and satisfying!  Kale has quickly become the green du jour, so here’s a way to please even the most ardent of anti-kale people. Ingredients: (For 4 portions) 1 lb of ground turkey 1 large bunch of kale, washed and chopped 2 large cloves of garlic 1 cup of white wine 1/2 cup of chicken broth 1 can or 16

Fall Brussles Sprouts & Kale Salad

There’s nothing like the flavors of fall!  Fall squashes, Thanksgiving meals, bold red wine… As everyone knows, brussels sprouts have been a very popular vegetable over the past few years.  Between last year and this year, we’ve been seeing a lot of kale too.  During our last Stew Leonard’s shopping adventure, we discovered a Kale & Shaved Brussels Sprout Medley that we couldn’t pass up trying out!  This is the perfect fall recipe and will complement any meal.  Plus, it’s healthy and super simple to prepare! We recently learned all the ways you can use Hood Sour Cream in every

Grilled Shrimp Primavera Salad

When the weather gets nice, we like to grill as much as possible.  On the first nice April day this year, I decided to make a little something different for dinner.  This was a great, easy meal that’s healthy and light.  Here’s what you’ll need: Ingredients 1 lb large  or jumbo shrimp 2 green or yellow squash Fresh ground black pepper Sea salt Crushed red pepper 2 TBSP extra virgin olive oil Spray olive oil Turkish spice blend (available from Penzeys Spices – salt, garlic, cumin, Telicherry black pepper, Turkish oregano, sweet paprika, sumac, cayenne red pepper, and cilantro) Juice

Tequila Stewed Chicken & Brown Basmati Rice

During this “Polar Vortex” we have been enduring over the past week or two, I have had to be creative with what we had around the house.  We always have chicken in the freezer and apparently, we also happen to have a stockpile of tequila….I decided to slow cook the chicken until it was so tender, it fell apart.  In order to soak up the great juice, I made some brown basmati rice to serve the chicken over. Here’s a great recipe for a cold winter night! Ingredients: (Serves two) For the chicken: 1 pound of chicken breasts or tenderloins

Sage Walnut Pesto

For all our healthy eaters- you don’t need to eat a big bowl of pasta to enjoy pesto.  Pesto can really be used many different ways, i.e. as a topping on sandwiches or over grilled meats. As the cool weather is coming nearer and nearer, I’m sadly realizing that it’s almost time to start either freezing or drying our herbs.  How does the summer always seem to FLY by?  With two very large & healthy basil and sage plants, I think this year I may just make big batches of pesto and freeze them. Last night, I made up my

Asian Chicken Stir-fry with Hatch Chile Peppers

It’s Hatch Chile season at Stew Leonard’s in Norwalk!  So I was inspired to make an Asian stir-fry dish with them, along with some onion and a weird favorite thing of mine… water chestnuts.  Weird… I know. Ingredients: -1 package of chicken tenders -1/2 onion -1 tablespoon of teriyaki sauce -Sesame seeds (white & black) -Olive oil -Crushed red pepper -Black pepper -1 small can of water chestnuts -Dash of low-sodium soy sauce Directions: Wash and dry the chicken.  You’ll want to make sure the chicken is really dry so that #1 there’s not as much of a mess and

Pan-Seared Chicken with Shallots & Sage

Believe it or not, our fridge is absolutely running on E – we’re desperate to go to the grocery store.  I did happen to have one small package of thinly sliced chicken breasts in the freezer along with a bag of frozen sweet potato bites (which I bought from Whole Foods not too long ago) so per usual, I got creative. Our herb plants are doing really well. So I figured why not use all the great fresh herbs I have out back!?  Easy enough… Ingredients: (serves 2) -Small package of thinly sliced chicken breasts -5 or 6 leaves of

Pork Milanese

16 May 6 Comments Cooking with Jeff and Cristina Cooking at Home , , , , ,

This past Sunday was Mother’s Day and I decided that instead of going out to dinner, I would make a nice easy dinner at home for my mother. Often I will make chicken or veal milanese-style, which typically is breaded cutlets served over arugula with fresh tomatos atop. As a different spin, I decided to make a pork milanese. Good pork is juicy, hearty and not ridiculously expensive. Here is a good recipe that will make mom or anybody else very happy to stay home for dinner! (Serves 4) 4 pork chops (boneless or bone-in) 2 eggs 1/2 cup extra
